Yields 10 people

To make the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Cocktail (makes 850ml, to serve 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Method

Making the Syrup: Put all the ingredients inside a saucepan, heat until it reaches a gentle boil, mixing so the sugar melts. After that, remove from the heat and leave to reach room temperature entirely. Transfer to a clean bottle, cap it keeping it chilled, it will last for up to one month.

To make Cocktail Base: Combine all the liquids into one sizeable container, allow it to infuse for one hour, then strain preferably using cheesecloth, so it's fully clarified.

For serving: Add 85ml of your cocktail base to a stirring glass packed with ice, gently stirring gently for one minute to chill. Strain into an frosted cocktail glass or equivalent, top with a few cranberries and finish with a brief mist of mandarin oil over the drink.
